Manual harvest and immediate transfer into the winery in small crates. Destemming and crushing in a pneumatic press. Static settling and alcoholic fermentation in stainless steel tanks at controlled temperature (16 °C). The wine is left on the lees for three months in stainless steel tanks.

Merlot wines are matched with a well-opened food fan. First and best to accompany mildly sweet-tasting Asian cuisine. More conventionally, however, a Merlot fits perfectly with all Greek traditional dishes.
Merlot’s first plantings in Greece took place in the 1960s.
In the beginning, grapes are used as a component of Bordelian blends along with Cabernet Sauvignon. The first single botanical bottling showed that Merlot in Greece can provide rich, exuberant wines, characteristics for which this variety is famous all over the world. Merlot responded to his trust from the beginning, giving wines with a complex aromatic character, a velvety feel in the mouth that could soften the harsh-eyed Agiorgitiko, to what is now considered to be one of the classic Greek blends.
